Hi!  I’m Truc-Lan.

I have recently found a love for cooking and baking.  My list of current food allergies is pretty extensive … at the moment the list includes allergies to: all fresh fruits and vegetables, apples, pears, peaches, plums, legumes (green beans, snow peas, snap peas), soy, tree nuts, peanuts, lactose intolerance, and a mild citrus intolerance.

I started this blog upon insistence from my friend Tina, and have loved it so far.  My goal is to show that even with my allergies and restrictions, I can and do eat well and am happy doing so.  I am always happy to share recipes that I find and am determined to not let these restrictions stop me from enjoying everything I can.  I’m currently seeing an allergist and receive weekly allergy injections in the hopes that a few years of immunotherapy will help me not be so restricted in my diet.

When I’m not cooking or baking, I’m in grad school full-time for Education, work part-time at a restaurant, teach and tutor the SAT and ACT, and try to find other time to play some of my instruments, rock climb, swing dance, knit, and read.
