Chicken with caramelized onions

Okay, so I eat a lot of chicken.  Why?  It’s cheap, it’s simple, it cooks quick, and it’s pretty versatile.  I track down all the good recipes I can find and this one struck my fancy with my newfound love for onions.

This recipe is chicken with caramelized onions in butter, lemon, and white wine.  It’s from one of my favorite food blogs, Crepes of Wrath.

I loved this recipe because it was simple, and the chili flakes with the chicken gave it a little kick.  The butter, lemon and white wine sauce was really flavorful and the onions cooked perfectly in the sauce.  I also liked the recipe because I could use my toaster oven to cook the chicken as opposed to having to preheat my oven, which takes about an hour (it’s pretty old).

I served the chicken over some rotini (leftover from making garlic soup) and some frozen zucchini for some color and vegetables.  The first time I made the dish in the summer for my parents, I got a little sick since the recipe calls for so much butter, so this time I was smart and took some Lactaid, just in case my body didn’t want to cooperate.

I love chicken when it’s paired with onions. I really enjoyed this post. Very nice.
