Chicken piccata

I made this a while back and discovered the picture in my ‘cooking’ album and realized I never blogged about it!  I found an ‘easier chicken piccata’ recipe online and it was certainly really simple.  After coating the chicken with a simple flour mixture, it was simmered in a white wine and lemon juice sauce.  I served it over some linguine and with mixed vegetables.  The sauce was light and worked well with the pasta.  I made 4 servings total and it worked well as a leftover.
